I always like a good salad, but not one just of lettuce, tomatoes and cucumber,
And when I have not got much time I sometimes cheat. Don't we all!
Today my salad consisted of-
half a tin of new potatoes.
half a tin of pineapple pieces.
half a tin of mixed beans.
half a tin of sweetcorn.
one cut up cooked beetroot.
one cut up tomato
a few slices of cucumber.
and a few pieces of lettuce.
all topped with mayonnaise.
I must admit it made quite a plateful probably enough for two. But as I love salad
I managed to eat quite a bit.
And as you can see by the cans most were the value range so super cheap.
I could eat this every day for lunch. I would just vary the ingredients, maybe adding peppers
mushrooms and cheese or maybe pasta instead of the potatoes.
