French Madeleine Cakes for Breakfast.

Hi everyone. I thought I would share with you what I made the weekend. I seem to have a bit of the baking bug at the moment.

I made French Madeleine cakes-

Ingredients

2 eggs
1/2 teaspoon vanilla extract
1/2 teaspoon lemon zest
125 g icing sugar
100 g plain flour
1/4 teaspoon baking powder
125 g butter melted and cooled

Preparation method

Prep approx 15 Min's/ Cook 12 Min's/

Preheat the oven to 190 c/ gas mark 5.
Grease and flour 24 Madeleine mould's
In a medium bowl beat eggs, vanilla and lemon zest with an electric mixer on high speed for approx 5 Min's.
Gradually beat in the icing sugar, mix until thick and satiny.
Sift together the flour and baking powder. Gently fold into your egg mix.
Then fold in your cooled melted butter.
Spoon batter mix into your greased and floured tins.
Bake in the preheated oven for 10 to 12 Min's until the edges are golden brown.
Loosen with a knife, leave to cool
Sift icing sugar over the tops or melt plain chocolate and dip tips in.
Store in an airtight container.

Then enjoy!

The finished Madeleine's. My daughter brought me the Madeleine tray for my birthday. She knows we all love them!

And this is it our quick cooked breakfast with homemade lemonade and my Madeleine's. It was Yummy!!!!

Nice to have my big table back, it gives us plenty of room to spread out.
